What defines culinary traditions – and how do they change? Between the rediscovery of forgotten practices, the reinterpretation of traditional dishes and the search for sustainable ways of eating, new perspectives on our food culture are emerging. What was once regarded as modern and progressive may now seem outdated; supposedly old practices are being rediscovered, reinterpreted and adapted to contemporary needs.

The event brings together diverse disciplinary perspectives from design, transformation research, agricultural and food marketing, as well as cultural and social sciences. The focus is on the question of how food cultures are evolving between tradition and innovation.
